White Cupcakes recipe
Makes 16
115 g self-raising flour
1 tsp baking powder
115 g soft margarine
115 g caster sugar
2 eggs, lightly beaten
1 tbsp milk
red food colouring ( optional)

Preheat the oven to 180°C. Put 16 paper cases in bun trays. Sift the flour and baking powder into a large bowl. Add the butter, caster sugar and eggs and using an electric mixer, beat together until smooth. Mix together the milk and a little red food colouring, if using and beat into the mixture until evenly blended. Spoon the mixture into the paper cases. Bake in the preheates oven for 20 minutes or until risen, golden and firm to the touch. Transfer to a wire rack and leave to cool. Swirl the topping over the cupcakes.
